Chocolate Cupcake Recipe!

Hello everyone, I hope your having a good start to the year. Today I have for you a recipe for chocolate cupcakes, and these are my absolute favourite. This was my Great Nan's recipe, and my Nan loved it, and my mum loved it and now me and my sister love it.

Ingredients: To make 12 cupcakes.
4 ounces margarine
5oz caster sugar
4 ounces self raising flour
2 eggs
2 tbsp cocoa powder
1 tbsp milk

To make icing- 
1 ounce of cocoa powder
250g icing sugar
55g margarine
1 tbsp of boiling water


Method:
1.  Preheat oven to 160 degrees.
2. Cream together the butter and sugar, until light and fluffy.
3. Add the eggs, milk and flour to make a cake batter.
4. Then add the cocoa powder.
5. After this you put the cake batter into the cupcake cases, and put into the oven for 20-25 minutes. If they need to, put them in the oven for a bit longer. 

6. While they are in the oven make the icing, you cream together the icing sugar and margarine.
7. After that you add the cocoa powder and the hot water.
8. If the icing is too runny add icing sugar, if the icing is quit stiff and a bit of water or milk.
9. Take the cakes out of the oven and let them cool for 20 minutes
9. Put the icing onto the cakes, thick or thin, that is your choice. For decoration I put on 3 maltesers.

How to make Lemon Drizzle Cake!

Hey everyone, today I have for you a recipe for my Lemon Drizzle Cake recipe.
This is one of my favourite things to bake as the aroma of when it is baking is amazing! If you like me doing baking posts, let me know in the comments? My dad works at Magnet, and he just built a new kitchen in his store, and its functionally working, so you can use it. He asked me and my sister to bake some things, so my sister made chocolate cupcakes, and I made mini lemon drizzle cakes. 
Lets get started!


Ingredients: 
6 ounces self raising flour
6 ounces caster sugar
6 ounces margarine
4 eggs
Zest of a lemon
1 tsp baking powder

Icing:
50g icing sugar
Juice 1/2 lemon

Method:

1. Preheat your oven to 160 degrees
2. Cream together the butter and sugar until its light and fluffy.
3. You then add the 4 eggs and the zest of a lemon, and beat well until it looks like this.
4. You then add the baking powder and the self raising flour, and mix to form a cake batter.
5. I have these 4 little mint green loaf tins, so I put my batter in their, you could put it into a bigger loaf tin, or into cupcake cases and make lemon drizzle cupcakes. You grease your tin, and then put equal amounts of the cake batter into each tin.
6. After this you put them into the oven for 35 minutes until they are golden. To check if they are done, stick a skewer into it and if it comes out clean, then they are baked. If it comes out with batter on it, put them in the oven for additional 5 minutes. Let the cakes cool for 20 minutes.
While you are waiting for the cakes to cool, make the icing!

Icing:

1. Juice half of a lemon into a bowl, make sure no pips go into it.
2. Add as much icing sugar (powdered sugar if your american) into the juice as you want, I like to have my icing quite thick so you can actually see it. But its your choice as to how thick you may want it.
3. When the cakes are finally cool, drizzle on your icing, and then eat them!

DIY- How To Make Easy Mince Pies!

Hello everyone, today I have for you a recipe for mince pies, and these are amazing and the best part is you need 3 ingredients! Its so simple and easy to make, and it takes literally 10 minutes to make, and 20 minutes to bake! So lets get on with it!

Ingredients:
Ready Rolled Short Crust Pastry
Tesco's Finest Mince Meat
Milk (for glazing on top of the pastry)

Method:

1. First of all you need to preheat the oven too 180 degrees.
2. You unravel the pastry until its flat out, like this.
3. After that you get a medium size pastry cutter and cut out as many circles as you can but leave a bit of pastry for the top part.
4. Now for this part, you need to get a cupcake tray, and place the circles in the tray.
5. You then place a spoonful of the mince meat and put into the pastry.
6. You then cut out a shape for the top to cover the mince pies. I used a Sherri glass to cut out the circles. I then place them on top and I brushed some milk over the top as the glaze.
7. After that, you put them into the oven for 20-25 minutes, until the mince meat is bubbling.
8. You then take them out the oven and wait for them to cool for 20 minutes.
9. You then dust them with a bit of icing sugar or powdered sugar if your American.

DIY- Christmas Cupcakes + Vanilla Cookies!

Hello everyone, today I have for you 2 recipes, and one of them is how to make these christmassy cupcakes, and the second recipe is how to make my Christmas Vanilla Cookies.
These are quite simple to make, and they are very tasty!
Hope you enjoy!

CHRISTMAS CUPCAKES

Ingredients: to make 12:  133g self raising flour
133g margarine
133g caster sugar
1/2 tsp baking powder
2 eggs
1/4 tsp vanilla extract
To make icing: 55g margarine
250g icing sugar
Boiling water
Food colour of your choice
christmassy decorations

Method: Preheat your oven to 170 degrees
1. Put the christmassy cupcake cases into the cupcake tray.

2. Cream together the butter and the sugar until light and fluffy.

3. Add the egg and the vanilla extract and mix.
4. Add the flour gradually.

5. Put the mixture in the cupcake cases

6. Pop in the oven 20-25 minutes, until golden brown.
7. Once your waiting for the cakes to cool, you can make the icing.
8. You put the butter in the bowl and cream together with the icing sugar. To make it a bit easier, I add a bit of boiling water to make it easier to mix. If its too runny add more icing sugar. If its too dry and more water.
9. You can then pipe your icing, I added a bit of yellow food colouring. I then put a little edible (Father Christmas, christmas pudding, snowman,stocking) on top of it.

CHRISTMAS VANILLA COOKIES

Ingredients: 170g margarine
150g caster sugar
2 teaspoons vanilla extract
1 egg
281g plain flour
1/2 tsp baking powder
Icing- (I got the Dr.Oeteker Pink Icing)
Any other decoration you would like to use!
Christmas cookie cutters

Method: Preheat your oven to 180 degrees

1. Cream together the butter and sugar
2. Add the: egg, vanilla extract, baking powder
3. Add the plain flour and stir together to form a ball.
4. Put in the fridge to chill for 10-15 minutes.

5. Put your ball of dough onto a floured surface, and roll out about 1cm thick. ( Yes, i am watching Zoella)
6. Cut out your shapes, I had a christmas tree, and a gingerbread man!
7. Pop in the oven for 11 minutes until golden brown.


8. Let them cool, and then ice and decorate them.
9. Eat them with a cup of tea!

Vanilla Cupcakes!

Hello guys, today I have for you today is my Vanilla Cupcake Recipe, these are what they should look like and they are very tasty. Sorry for how bad quality some of the pictures are, half way during taking photos for this post,my camera died so I had to use my phone. Enjoy!

Here are the ingredients you will need and you can convert the measurements into whatever you want. These ingredients make 24 cupcakes.

Ingredients: 
8 ounces self raising flour
8 ounces caster sugar
8 ounces margarine/unsalted butter
4 eggs
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder



To make the icing:
500 grams icing sugar
110g margarine
1/2 teaspoon vanilla extract
30ml boiling water
1/2 teaspoon of any type of food colouring you want
any decoration you may or may not want

Method: Preheat the oven to 160 degrees celcius
1. First of all you have to cream together the margarine and caster sugar until its light and fluffy.
2. Add the 4 eggs and the vanilla extract, and mix together until its quite liquidy. 
3. Add the flour bits at a time and mix it all together until it forms into a nice creamy mixture. 
4. Scoop the mixture into each individual cupcake case and only fill half of the cupcake case.
5. Put in the oven for 25-30 minutes and then leave to cool for 25 minutes.
6. Whilst you are waiting for the cupcakes to cool, make the icing.
7. Measure out the icing sugar, margarine and vanilla extract and put into a bowl. 
8. Measure out the boiling water, and please BE CAREFUL.
9.  Pour it into the bowl with the sugar, margarine and vanilla extract, and you will need an electric mixer to mix it all together, and there is a good chance your kitchen will get messy.
10. If your icing isn't thick enough then add more icing sugar. 
11. Pipe your icing onto the cupcake and decorate them with whatever you want. I used white chocolate chunks.
